Today I am bringing you a new recipe for yet another pesto: Pesto alla Siciliana. This is a very complicated recipe that is only for the best trained cooks among us 😉
All you need is: a blender! Ready?
500 g fresh tomatoes
150 g ricotta
50 g pinenuts
100 g Parmigiano Reggiano
150 ml extra virgin olive oil
1 clove of garlic
Roughly chop the tomatoes, grate the cheese and peel the clove of garlic. Now throw everything into a blender and blend until smooth.
Boil some short pasta like penne and serve the pasta with the pesto.
And you’re done! Difficult, right?
