I enjoy baking and baking cookies, because these recipes are usually really easy to make and do not take a lot of time. Most of the time, you use ingredients you’ll have laying around anyways.
I would like to share one easy and summery recipe for incredibly soft and juicy orange cookies.
100 g melted butter
100 g sugar
1 pckg vanilla sugar
1 orange, zest of
50 ml orange juice, freshly squeezed
280 g flour
1 pckg baking powder (approximately 1 tsp)
Start by pouring the melted butter and adding the sugar in a bowl. Work with a mixer until frothy and the colour has turned slightly white.
Now add the egg and mix again until the mixture turns white. Add in the orange zest and the juice and mix again.
Change the hooks of your mixer to kneading. Add the baking powder and the flour and work into a dough.
Shape a ball out of the dough, wrap it in parchment paper and refrigerate for about 2 hours.
Once the 2 hours have passed, heat up your oven at 180ºC (356ºF). Take out the dough and shape grape-sized balls of dough. Place them on a baking tray with parchment paper. Remember to leave a good distance between the single balls, because they will grow in the oven.
If you would like to, you can coat them now with powdered sugar, I didn’t.
Bake for 15-20 minutes at 180ºC (356ºF).
They will be crunchy on the outside and soft on the inside. The longer you’ll store them, the harder they will get. 😉
