More Gazpacho (with Red Beets)

Welcome back to my little corner of the internet!

It is getting warmer in Spain and I am giving in to my addiction to Gazpacho. So, here is another recipe, if you want.

This time a dear friend of mine suggested I use red beets in my gazpacho. To be honest, I have mixed feelings about red beets. I do not know why, but somehow they are not my favourite veggie. However, I gave it a go and, apart from the awesome purple colour, the gazpacho was really tasty. I am starting to think that it is almost impossible to mess up the recipe of gazpacho.

Here it goes:

Get your blender ready!

Ingredients:

1 onion, chopped

500 g tomatoes, chopped

1 green pepper, chopped

1 cucumber, chopped

500 g red beets, boiled and peeled

Olive oil

Apple vinegar

Salt

Pepper

a few ice cubes (optional)

Purple colour

Now get ready for a very complicated recipe. Throw all your veggies into your blender and blend them until smooth. Add a gulp (approximately 1/2 cup) of olive oil. Add vinegar, salt and pepper to your liking and serve either immediately or chilled. If you would like to, add a few ice cubes into the soup.
