The weather is getting warmer and my cravings are for summery foods. To be honest, I am all but a soup lover. It is not that I do not like soups, but somehow I hardly make any, nor do i really have any cravings for them. Maybe this comes from my 10 years on and off with brackets and retainers…However, if there is one soup I really enjoy, it certainly is gazpacho in all its forms and shapes.
When it is hot outside and you do not feel like eating anything heavy and you are tired of all the salads, gazpacho is the perfect solution. Ever since I was a child, we have made gazpacho at home.
As for the ingredients, I hardly ever work with measurements, using what feels right and what I have in my parents’ garden. So here are the ingredients with an approximate quantity, but it is really up to you.
500 g strawberries, washed and with the green leaves removed
500 g fresh tomatoes, chopped
1 cucumber, peeled and chopped
1/2 onion, chopped
2 cloves of garlic
1/2 green bell pepper
4 tbsp apple vinegar
1/2 cup olive oil
ice cubes (optional)
Start by putting all the the ingredients, except the ice cubes, into a blender. Blend until smooth. Season with salt and pepper. Taste and, if necessary, add some more vinegar or olive oil. You are looking for a slight tangy flavour.
If you would like to, you can add a few ice cubes into the soup. Otherwise, you can put the gazpacho into the fridge for a couple of hours, or eat it right away. It is completely up to you 🙂
Serve with some bread. Enjoy!
