Stuffed Bell Peppers Revisited

Welcome back to my little corner of the internet!

Today we are making one of the favourite dishes throughout my entire childhood: Stuffed bell peppers.

This dish is quite common in Germany, where it is believed to come from Hungary. Mostly the peppers are stuffed with minced meat, a mixture of minced meat and rice, rice and more recently with bulgur or couscous.

The recipe is really simple: You throw everything together and leave it on the stove or in the oven until done.

Usually the peppers are served with tomato sauce, but I like to chop some left over vegetables into the sauce, to give it some consistency and to clean up my fridge.

You can serve it with some rice, oats, etc. on the side. For this very recipe, I used a grain mix I found at the store and it was amazing.

Disclaimer: I usually do not measure the ingredients and just make it as I feel. I also tend to vary the spices I use (apart from the basic trio: Paprika, pepper and salt). 

Now, let’s get started!

Ingredients for 4 stuffed peppers:

4 bell peppers (use your preferred colour)

300g minced beef

1 onion, chopped

1 clove of garlic, crushed

1 can peeled tomatoes

1/2 zucchini, diced

1/2aubergine, diced

1 egg

1/2 package feta

oregano

2 tsp hot paprika powder

1 tsp chili powder

salt

pepper

olive oil

water

Put the meat in a bowl, add the egg, crush the feta and add to the mixture, season with paprika, salt, pepper and oregano. Work the mixture with your hands. You can use a pair of gloves to work it, like I usually do.

Wash your peppers and cut off the top. Clean the inside and fill the peppers with the mixture. Cover with the pepper lid.

Put a bit of oil into a big casserole with a lid. Heat up and add the zucchini, onions and aubergines, Place the peppers inside the pot standing up. Add the canned tomatoes around the peppers, wash the can with water and add that water also to the pot. Season with paprika, salt and pepper.

Cover with a lid and let it simmer on low heat for about 45 minutes. Personally, I prefer making the peppers on the stove, because they get a stew-like flavour. But you can just as well bake them in the oven at 180° C for about 45 minutes.

Serve with rice or other grains. Enjoy!
