We have experienced a quite long heatwave here in the Netherlands with temperatures up to 40°C…perfect for my Southern soul and my summer love. So I have had enough time to make my favourite summer recipes and try out some new ones. Since I am all but a soup lover, my repertoire of soups is rather slim, however, there are a few summer soups I enjoy.
It’s been a while since I have gotten some requests to share the recipe for my Sopa de pepino, aka cucumber soup. Here it comes:
Ingredients
2 cucumbers
1/2 onion
1/2 green bell pepper
1 clove of garlic
1 cup Greek yoghurt
50 ml olive oil
Water
Salt
Pepper
1 handful fresh mint (alternatively 2 tbsp dried mint)
This recipe is incredibly easy and perfect for lazy people or who doesn’t enjoy cooking. All you need is a blender. Roughly chop all the veggies and blend everything together. Add enough water to get to the thickness you wish and you’re done. Ideally, put it in the fridge for a few hours and serve chilled. You can also add some ice cubes to speed up the cooling process. Enjoy!
