An easy lunch idea!
A few days back, I found a great idea for an easy lunch. Unfortunately, I do not remember where I had found it, but I remember it was in French..
I don’t know about you, but I happen to end up with some leftover veggies all the time. Usually, they whither away, until I make something quite dull out of them and curse myself for not having used them earlier. Here’s an example, I had bought some carrots and bell peppers a couple of weeks back and was left with 1 bell pepper and one carrot, which had gone all soft and wrinkly.
While staring at them today and wondering what to do with the, I remembered the recipe I had seen and decided to give it a try.
Here it goes, Omelette Tartine:
- Take your old slices of bread and make some sort of French toast out of them. Start by separating the inner part from the crust. Leave like 1 cm of crust. Separate the middle and set it apart.
- In a frying pan heat up some olive oil and toast the husks of bread until they are crunchy.
- Place them on a plate and start chopping your veggies. Use anything you feel like. For me it was an old tomato, the wrinkly bell pepper and the sad carrot. Grate some cheese in a bowl and mix some eggs with salt and pepper in another bowl.
- Now go back to your pan. Pour some olive oil or butter – depends on your personal preferences – and fry your veggies. If you feel like it, you can also add some meat, or ham.
In the video I had seen, the guy placed the bread right on top of the veggies, but since I found myself with a lot of veggies, I preferred setting them aside.
- I placed the bread husk into the pan, placed some of the veggies into the hole in the centre of the bread and poured some egg on top. Covered with grated cheese and closed with the bread I had previously cut out.
- I fried it for a couple of minutes, until the bottom was cooked enough to flip it over. I flipped it and cooked for another couple of minutes. Now I repeated the process with the other slices of bread and the remaining veggies.
The result was a nice toast that gave my sad veggies a makeover. I even added some left over crème fraîche to the plate.
I think this dish has great potential and a huge variety of possible variations. Maybe I can convince my husband to make this for his lunch, or that might be a bit too optimistic..
