Today we are late, as usual due to my Dutch lessons.
Therefore, we are going to enjoy an old classic: Irish stew.
As soon as I had come home from work, I prepared the stew and threw it into my pressure pot. When I came home from class, I added the potatoes to the stew, so that they could cook while I was showering..talk about timing 😀
I got the recipe for this very traditional Irish dish from an Irish family friend. A nice version of the stew is this one:
Ingredients:
8 potatoes, peeled and chopped
2 carrots, chopped
2 stalks of celery, chopped
1/2 cabbage, chopped
3 large onions, diced
2 cloves of garlic, crushed
2 tbsp butter
fresh parsley, chopped
fresh sage, chopped
fresh thyme
800 g lamb, chopped
1.5 l lamb broth made from the bones
salt
pepper
soda bread to serve
Take a large pot or a pressure pot if you are in a hurry, and melt the butter. Sauté the onions and garlic until the onions are translucent. Add the carrots and celery and cook for a few minutes. Now add the potatoes, the herbs, the lamb meat and the stock and bring to a boil. Reduce the heat and simmer for 30 minutes.
If you are using a pressure pot, bring to a boil and then close the lid and cook on the second ring for 20 minutes.
Otherwise, after 30 minutes, season and cook for another 30 minutes.
Serve with soda bread.
The dish was warming and soothing after a long day and a bike ride home in the cold evening air.
The meat was incredibly tender and falling right off the bone. The potatoes ended up being creamy and soft. The broth was just great. A really nice dish for cold days.
