Day 36: Chad and Daraba

Hello, Raffies!

Tonight we were going to Chad. I did not know anything about the cuisine of this country and was really looking forward to try this dish.
The recipe of Daraba that I had found online appeared to be very simple.

Ingredients:

340 g okra

3 tomatoes

1 sweet potato

1 aubergine

2 handful mixed green vegetables

1 cup peanut butter

1 bouillon cube

Cayenne pepper

Salt

Pepper

This is a vegetarian dish with several different types of vegetables: okra, aubergines, onions, tomatoes, sweet potatoes, spinach and peanut butter.  The recipe is incredibly easy.

All vegetables are simply stir fried together with some water, bouillon, salt, pepper and cayenne pepper. Add the peanut butter (I have used the one with peanut pieces) and let it simmer, until you get a dense sauce. Accompany with some boiled rice.

Do you enjoy stews? What about peanut butter in savoury combinations? Let me know in the comments below.

Love,

Raffi
