Today spring recoiled and cold and rain have come back.
Luckily, we were going far South to Burundi.
I went shopping for plantains and kidney beans and was ready to experience my first time using plantains in a dish.
This simple dish turned out to be really good!
It was really easy to make: simply cook some onions, kidney beans, plantains with water, salt, pepper and chili powder and you’ll get a tasty result.
This is the recipe I have followed for this dish.
Ingredients:
3 cups red beans
2 tbsp red palm oil, Fair Trade
1 onion, sliced
1 plantain, sliced
salt
1 tbsp chili powder
2 cups water, or more
In a pan, heat the oil and fry the onion. Add the beans, plantains, salt and chili pepper. Depending on how hot you want your dish, add more or less chili powder.
Add the water and simmer for about 45 minutes, or until the plantain is cooked and 1/2 cup of liquid is left. The dish should be thick.
Serve with rice and, if you want to, meat or fish.
