Today we enjoyed some nice Italian sun and plunged into one of the world’s happiest countries: Bhutan.
The national dish of Bhutan, Ema Datshi, is a very special cheese and hot peppers’ stew, which is served with red rice. I must admit that it turned out quite hot, spicier than we would have expected, but, nevertheless, it was very tasty and much appreciated by the whole family. It is a very spicy dish, since “ema” means “chili” and “datshi” means “cheese” in Dzongkha.
If you are not that heat resistant, you may use milder varieties of chilies. 😉

250 g green chilies, cut lengthwise into four
1 onion, sliced
1 1/3 cups water
1 tbsp vegetable oil
2 tomatoes, chopped
150 g blue cheese
150 g feta cheese
5 cloves of garlic, crushed
3 stalks of cilantro
1 cup red rice, ideally Bhutanese rice
Start by washing the rice and add it in a pot with 1.5 times as much water and bring it to a boil. Reduce the heat and cook it for 20 minutes. The whole liquid should be absorbed.
In the meantime, take the chilies and onion and in a skillet, with the water and the oil, cook it on medium heat.
