Day 19: Benin and Akkra Funfun

Good evening from Italy!
Today we were travelling to Italy to visit my mom for the weekend.
My world food challenge is obviously coming with me.

Today we are in Benin! Since we were travelling, we had calculated that we wouldn’t be that hungry and we would probably be quite tired. Therefore we decided to go for a snack. Akkra funfun appears to be a quite common snack in Benin, where it is served very hot. Well, as soon as we got to my mom’s, I got to work and made this delicious snack. Akkra Funfun is a fried ball made out of white beans and onions. It was very filling and delicious!

Here is the recipe, if you want to try it out!

Ingredients:

1 1/2 cup white beans

1/4 cup water

2 tsp salt

1 onion, finely chopped or grated

1 tbsp flour

cayenne pepper

vegetable oil for frying

Start by soaking the beans in water overnight, if you are using dried beans. Now rinse the beans and boil them in water until soft (approximately 1 hour).

Drain well and pour them into a blender. Add all the other ingredients, apart from the oil. Blend until you will have a thick dough-like paste. If necessary, add some water, if too dry, or some flour, if too wet.

Heat the oil in a wok or skillet. Using two spoons, scoop up some of the batter and scrape the batter from one spoon with the other spoon directly into the oil. Fry until golden brown. Repeat until all the batter is used up. Drain on some kitchen paper and serve hot.

I think this is a great snack or finger food for a party.
